How can I unmatch with someone?

To unmatch with someone:

iOS - From the Messages tab, swipe left on the person you wish to unmatch with. Then, press “Delete.”

Android - From the Messages tab, tap and hold on the person you wish to unmatch with. Then, press “Unlike.”

This action will remove the match between you and that person.
